Final Project

This blog is the result of an internet class that I had to take for my senior year to earn my four year degree in Business Management. For the final project in this class I have chosen to write this blog to answer a question that this class has sparked within me. Maybe the question and blog has been swimming around in my mind for some time now. I must also admit that will all honesty, this subject scares me a little. Here is my blog, here is my final project blog and here I am finally at the end of a long road.

The tide keeps on shifting and the evidence is clear, technology is always going to be one better than us humans or is it? Here I sit, I just turned forty years old. Technology has changed our world but none of us know how much until we really turn our pages backwards to the beginning chapters of our lives to see the progress or should I just say what it is, the change that has occurred. Where are our social interactions gone?

My life before the “rise of the machines” was great! We played outside with our friends, played with our pets, and we had neighborhood baseball, dodgeball, volleyball, bad mitten, anti-I-over, and basketball games. Went sledding on the local water hill. Found parks and cool places to dig for treasure. Pretending to make mud pies was a favorite and adding grass, weeds, rocks and spit was normal. We got dirty, we got exercise, and we were social. We knew where or what house our friends were at by whose bikes were sitting out front in the yard and we joined in!

I grew up with a phone that had a cord attached to the wall and now I have an IPhone sitting beside me on the couch. Most people that go out to eat or hang out just sit on their phones and do other social networking things other than talk to the real person sitting right in front of you.

I watched T.V.’s that had tinfoil as antennas just so we could faintly make out what big bird might look like in black and white.  Now we have instant videos, movies and music at a touch of an app right on our phones! No antenna needed! As kids and as families we would gather around the television that worked best and maybe watch a show, pop some popcorn and socialize. This rarely happens anymore.

The first time I saw a microwave, I thought the thing was going to blow my head up. I had no idea how a box could cook food. What a strange concept. Now to not have a microwave is impossible because how would you actually cook something then?

I took my first typing class on a typewriter, there were no computer labs. Now computer labs exist no matter what age you are in school and most kids learn how to work the computer and keyboard before they can even walk.  Computer classes don’t even need computer labs anymore and most can be done online. Once again, no social interaction.

I took pictures with a camera you had to load film into and change the flash bulb. I remember when polaroid cameras was the latest upcoming technology and how it was exciting to see the picture right away(after waving it in the air for a few minutes)and not wait for it to be developed! You guessed it, phones are our camera and there is no waiting for developing at all. Matter of fact, take a picture and just post it online in a matter of seconds! How simple but how sad. No more gathering in a living room visiting around an album of pictures or a handful of freshly developed glossy pictures, all we have to do is look at what they posted on Facebook with ourselves and no conversation needed.

The first home computer game I ever came into contact with was a computer called a Vick 20 where we had to put computer codes to make it do whatever we coded in. Now we see kids that are walking around with games on their phones, iPad, notebooks and then also they have systems that connect to the internet at home where they can play their friends but don’t have to be in the same room anymore.

I remember the record player was hard to manage if you wanted to play a song in the middle of the album. Your brain just kept repeating “be steady, don’t scratch the record”. I was one of those sisters who accidently scratched my brothers Michael Jackson record even though I thought I could just listen to “beat it” one more time. Eventually, cassette tapes came out but that was after eight track tapes and I remember I sat for hours in front of my stereo waiting for my favorite songs to play so I could hit record and tape them on blank cassettes to have a collection of my favorites.  Once my collection was complete, I would get together with my friends and share the great songs. Now, we just download the music with our phone from iTunes which takes a matter of seconds not days and this is usually done alone.

I discovered the internet when I was in my twenties and that too plugged into a phone outlet. Now we expect wireless everywhere we go! The grocery stores even offer their shoppers wireless while they shop! Wow, what a concept! No more receipt books and receipt cards to share at dinner parties and social events, let’s just look that up on my phone in the middle of the grocery store to see what needs to be bought. What a world we live in now. If only some of you who are younger could understand this technology movement. It did not just happen in a waves, it hit like a tsunami!

The world became less social face to face. Where are our social interactions gone? The world has become a giant as social media has taken over our world. It is so much easier to text than call. It is much more convenient to play games on line than to have people over to play. It is much easier to share music, share pictures, share videos. The information that can be acquired can be astronomical and absolutely endless. The interactions between people is becoming scarce and scary. What is left really? The world needs social interaction with people, face to face interactions. We are all going to become introverts in the real world but online we can be something totally different, we can be socially extraverted. This is the reality of the world we live in. The next something is yet to come. The next something is socially unskilled.


Meat sticks

Yesterday was a very busy day! Wow, I had to work in the morning and then had plans the rest of the day going here and there. It seemed as if the time went so fast, so fast indeed that I forgot to eat lunch! I realized this mistake at 1:30 pm in the middle of the landscaping department at Menards! Well, as you know, I just can’t go pick up a candy bar to tide me over, I would have to search endlessly for something that I could even eat. So off I went to the grocery isles. (did you know Menard’s has groceries?) anyway, tons of food for all the normal people. But I seen a few items that were gluten free but not something I dared to eat because I am so sensitive. Then I thought protein! I searched for the beef jerky isle hoping that they would offer gluten free brands. I was shocked!! Yes indeed they carried the best gluten free beef sticks ever! Kremers are the best! I eat that brand all the time and I have never gotten sick once. I trust that brand and I scooped it up, paid for it and boy did that satisfy my hunger better than a candy bar ever could! Great job Menard’s! Thanks for having a gluten free option! I then enjoyed the landscaping department much better!

Gluten free Noodles

There are few things in life that can make you feel like mom just came into your home with a warm embrace. Let’s talk comfort food from good old sweet home!! There are those certain dishes that when served and eaten you immediately feel like you are at home with all the security and comfort of the world. Can you imagine if one day all those foods you felt this for was just suddenly taken away, with no hope in sight to ever feel that warm fuzzy feeling again. Your whole world changes and food is no longer a comfort but a stress inducer. Worrying about what products you can even use in all these things you know and love! Think about all those comfort foods you that you have. Most of them have gluten in them. Most of them would be hard to find gluten free options to throw together a homemade meal.

One of those comfort foods that I thought would be lost forever was Lasagna. Yes, the days of a big cheesy piece of layered noodles and sauce are gone!! How could this be? No more Lasagna!! That is so absolute devastating of thought to think about….

But then I found a recipe for gluten free lasagna and my world changed!! Here is the link people!! It is amazing!!!

Cold chilly night..

The weather outside tonight is freezing sleet and snow. The temperatures are cold and all I want to do is curl up on the couch with a great cup of tea. Before I was gluten free, I would drink any tea that I wanted and I thought would be good. I loved to try all sorts of flavor and varieties. I figured I had had them all. I have always been a big tea drinker as far back as I can remember. My family has always been tea drinkers. I remember visiting my grandparents and tea was just something we did all the time. I especially loved my tea with some fresh baked cookies that my grandmother would make. So since I have been restricted to gluten free foods there is only one brand of tea that I can drink that will not get me sick. I know, you are thinking, how can tea have gluten in it?  Well, some do. But if you need to be gluten free the best tea in the world is the Bigelow tea! Wow, this tea hits the spot. Especially on a miserable and cold night like tonight. I add a fresh mint leave and a little lemon slice and it is the best hot drink aside from my morning coffee! I am a very sensitive Celiac so it is such a treat to find a tea I can drink that does not make me sick. Add a gluten free cookie and yum!! 

The first diagnosis…….

The waiting was the worst… test results would be in but it would be a week or two just depending on what the results were. I remember those days to be dark and dreary although it was July and hot as the surface of the sun. I felt trapped and unsure of my future. I was suppose to be celebrating the fourth of July but all I could do was think of if I should take out a life insurance policy so my daughter would have something to bury me with. How morbid!!

The first call came, my doctor told me that all my test results came back low. So I had low blood sugar and  I had vitamin deficiencies. Which ones? They were all low and then I hear was, you need to go to a specialist ASAP. There might be another underlying condition.  Ok, I thought, I can deal with low blood sugar. but what about the deficiencies? A specialist? Oh my…. More painfully and exhausting waiting is all I could think of. So waiting between the doctor and the specialist appointment I was told to eat frequently, which i had already been doing, to keep my blood sugar normal or best to normal as I could. So I Googled low blood pressure, not all the symptoms I was having was listed under this so I knew in the back of my mind there was more to this than just low blood sugar. But having low blood sugar was dangerous in itself. I was so scared I just cried and had no idea what would come next. It was just a matter of waiting for the next doctors appointment with a specialist. Just a couple weeks of waiting…….

Today, now that I am gluten free, I have a favorite Cracker that not only I love but even people who don’t have to be gluten free will love. This is my snack cracker. Great to put on a cheese tray and serve with wine! (cause I can drink some certain wines 🙂 ) The multi-seed cracker from Crunchmaster is certified gluten free and come in variety of flavors. I seem to stick with the original one because it is just so delicious with anything or alone! Go out and try some of these! You will not be disappointed!! Best cracker ever!!! Snacking guilt free and sick free!!

Super Bowl Treat

Like most people, I am watching the super Bowl today! There are so many foods and snacks that are served on this day as people sit and watch the game. Most of these foods, I can not have. But what a great and glorious day when I happened to pick up a bag of popcorn that was certified gluten free. Who knew my life of snacks would be blown away by the wonderful taste for this amazing popcorn! So fabulous! I am recommending that not only people that have to be gluten free but people in general should not miss out on this popcorn!  I have tried many flavors and all of them are wonderful! Angie’s Boom Chicka Pop is a must for the superbowl!! It is a must for everyone anytime!!

More of my story….

As my body was screaming for help and I was living in a strange world of confusion, depression, exhaustion and pain, going to the doctor for me was a big deal. I was so scared to go! What if I found out I was dying or more suffering from some rare disease!! After suffering through a night of horrible pain, I finally called the clinic and made an appointment. At that time I was working long hours and finding the time to go to the doctor was hard. I took a day off and scheduled an appointment. I remember sitting in the doctors office running through my list of symptoms thinking to myself “ this doctor is going to think I am crazy with all these things I am complaining about”! I felt so much guilt for going and complaining. Thank goodness I had a doctor that was so understanding and caring. She listened as I read off my hand written list of symptoms with my hands shaking, asked the right questions and soon I was in the lab getting all kinds of tests done. The waiting for the test results was the worst. The anxiety of finding out what might be wrong and that it could be anything was terrifying!

The best snack ever that gives me protein and fiber during my day is the Think Thin Protein Bar, Dark chocolate Peppermint!! Yum!! These bars are seasonal so I try to stock up on them in bulk! These are the only Think Thin protein bars that have no nuts of any kind so it is the only one I have found that I can eat! They are certified gluten free! This bar is a 3:00 work snack for me to help me make it through the work day and home to eat after work! Delicious!!
